Tomato rice
Tomato rice is a popular dish in South Indian cuisine and is often served with raita or papad.

Wash the rice and soak it in water for 30 minutes.

Heat oil in a pan and add sliced onions. Saute until golden brown.

Add crushed garlic, ginger, and green chilies. Cook for a minute.

Add chopped tomatoes and cook until they turn mushy.

Add turmeric powder, red chili powder, garam masala, and salt. Mix well.

Drain the soaked rice and add it to the pan. Mix gently.

Add water and bring it to a boil.

Reduce the heat, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked.

Remove from heat and let it rest for 5 minutes.

Garnish with coriander leaves and lemon juice. Serve hot.
