Peel and chop the sweet potatoes.

In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the curry powder and cook for another minute.

Add the sweet potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the sweet potatoes are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Stir in the coconut milk, lime juice, salt, and black pepper. Simmer for another 5 minutes.

Serve hot, garnished with cilantro.
