Rinse the lentils under cold water.

In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the curry powder, cumin, turmeric, and cayenne pepper. Stir well.

Add the lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes or until the lentils are tender.

Stir in the coconut milk, lemon juice, salt, and black pepper. Simmer for another 5 minutes.

Serve hot, garnished with fresh cilantro.
