Wash and peel the beetroot. Cut into small cubes.

Peel the garlic cloves.

In a baking dish, toss the beetroot and garlic cloves with olive oil, salt, and pepper.

Roast in the preheated oven for 40 minutes or until the beetroot is tender.

Allow the roasted beetroot and garlic to cool.

In a food processor, combine the roasted beetroot, garlic, Greek yogurt, lemon juice, salt, and black pepper.

Process until smooth and creamy.

Transfer the dip to a serving bowl.
