Rinse the basmati rice under cold water until the water runs clear.

In a medium-sized saucepan, combine the rinsed rice, coconut milk, water, grated ginger, and salt.

Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the saucepan with a lid.

Simmer the rice for 15-20 minutes, or until all the liquid is absorbed and the rice is tender.

Remove the saucepan from the heat and let the rice rest, covered, for 5 minutes.
