Rinse quinoa thoroughly and drain.

In a saucepan, bring almond milk to a boil.

Add quinoa and reduce heat to low. Cover and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff quinoa with a fork and stir in vanilla extract.

Divide quinoa into bowls and top with raspberries, almonds, and drizzle with honey or maple syrup.
