Heat olive oil in a large pot over medium heat. Add onions, garlic, celery, and carrots. Cook until onions are translucent.

Add potatoes, tomatoes, vegetable broth, bay leaves, thyme, salt, and black pepper. Bring to a boil.

Reduce heat and let simmer for 20 minutes or until vegetables are tender.

Remove bay leaves and thyme sprigs.
