In a mixing bowl, combine chickpea flour, rice flour, baking powder, and salt.

Gradually add water and olive oil to the dry ingredients, mixing well until a smooth batter forms.

Heat a non-stick pan over medium heat and lightly grease with olive oil.

Pour a ladleful of the batter onto the pan and spread it out into a thin, round pancake.

Cook for 2-3 minutes on each side until golden brown.

Remove the pancake from the pan and set aside. Repeat with the remaining batter.

In the same pan, sauté the mixed vegetables and fresh herbs until tender. Season with salt and pepper to taste.

To assemble the pancakes, place a spoonful of the sautéed vegetables on one side of the pancake. Add any optional fillings, such as avocado, hummus, or vegan cheese.

Fold the pancake over the filling to form a wrap.
