Rinse the quinoa under cold water.

In a large pot, heat the olive oil over medium heat.

Add the onion, garlic, carrot, celery, bell pepper, and zucchini. Sauté for 5 minutes.

Add the paprika, cumin, salt, and black pepper. Stir well.

Add the rinsed quinoa and vegetable broth. Bring to a boil.

Reduce heat and simmer for 20 minutes, or until the quinoa is cooked and the vegetables are tender.

Stir in the chopped tomato, fresh parsley, and lemon juice.

Let the soup rest for 5 minutes before serving.
