Preheat the oven to 180°C (350°F). Grease a loaf pan.

Pierce the sweet potatoes with a fork and microwave until tender. Peel and mash them.

In a large bowl, combine the mashed sweet potatoes, flour, baking powder, cinnamon, nutmeg, salt, coconut oil, maple syrup, almond milk, and vanilla extract. Mix well.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it rest in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
