In a large pot, bring vegetable broth to a boil.

Chop celery, carrots, onion, and garlic cloves and add them to the pot.

Add bay leaf, dried thyme, dried oregano, salt, and black pepper to the pot.

Reduce heat to low, cover, and simmer for 20 minutes.

In the meantime, cook frozen chik'n strips according to package instructions and shred them into smaller pieces.

After 20 minutes, remove the bay leaf from the pot and add the shredded chik'n strips, frozen corn, and frozen peas.

Cover again and simmer for an additional 10 minutes.

Stir in fresh parsley and lemon juice.

Let the soup rest for 10 minutes before serving.
