Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, celery, and garlic. Cook until vegetables are softened.

Add diced potatoes, tomatoes, mixed vegetables, red lentils, bay leaf, thyme, salt, and black pepper. Stir well.

Pour vegetable broth into the pot. Bring to a boil, then reduce heat and simmer for 25 minutes, or until lentils and potatoes are tender.

Remove bay leaf and thyme sprigs. Adjust seasoning if needed.
