Lemon Triangles
Lemon triangles, also known as lemon bars, originated in the United States and are a popular dessert item during summer picnics and cookouts.

Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.

In a mixing bowl, combine the crust ingredients - all-purpose flour, powdered sugar, lemon zest, and salt.

Add vegetable oil and mix until the dough begins to form.

Press the dough into the prepared baking pan and bake for 12-15 minutes, or until lightly golden.

Meanwhile, prepare the lemon filling by whisking together lemon juice, sugar, all-purpose flour, and baking powder until smooth.

Pour the lemon filling over the baked crust and spread it evenly.

Bake for another 15-18 minutes, or until the filling is set.

Allow the lemon bars to cool in the pan for 30 minutes, then refrigerate for at least 2 hours.

Once chilled, cut into triangle shapes and dust with powdered sugar before serving.
