In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the tomatoes, carrots, cumin, paprika, salt, and black pepper. Cook for 5 minutes.

Add the chickpeas and vegetable stock. Bring to a boil, then reduce the heat and simmer for 30 minutes.

Remove from heat and let the soup rest for 10 minutes.

Using an immersion blender or a regular blender, puree the soup until smooth.

Return the soup to the pot and heat gently. Stir in the lemon juice.

Serve hot, garnished with fresh parsley.
