Sweet Potato, Pumpkin & Coconut Pudding
Sweet potatoes are a great source of vitamins A and C, as well as fiber.

Preheat the oven to 180°C (350°F).

Peel and dice the sweet potato and pumpkin.

Steam the sweet potato and pumpkin until tender.

In a blender, combine the steamed sweet potato, pumpkin, coconut milk, brown sugar, cinnamon, nutmeg, vanilla extract, and salt. Blend until smooth.

Pour the mixture into a baking dish.

Bake for 40 minutes or until set.

Remove from the oven and let it rest for 30 minutes.

Serve warm or chilled.
