Heat vegetable oil in a large pan or wok over medium heat.

Add garlic and ginger, and stir-fry for 1 minute.

Add potato and stir-fry for 5 minutes, until slightly golden.

Add Brussels sprouts and seitan, and stir-fry for another 5 minutes.

Add mushrooms and continue stir-frying for 3-4 minutes, until vegetables are tender.

Season with soy sauce, salt, and black pepper.

Stir well to combine and cook for an additional 2 minutes.

Remove from heat and serve hot.
