Slice the eggplant, zucchini, red bell pepper, yellow bell pepper, and onion into thin rounds.

In a large baking dish, arrange the sliced vegetables in an alternating pattern.

Crush the garlic cloves and sprinkle them over the vegetables.

Pour the tomatoes over the vegetables and season with salt, black pepper, fresh basil leaves, and fresh thyme leaves.
