Heat oil in a pan and add mustard seeds. Once they start spluttering, add urad dal and chana dal.

Add chopped onion, green chilies, ginger, and curry leaves. Saute until onions turn translucent.

Add mixed vegetables and turmeric powder. Cook for 5 minutes.

Meanwhile, boil water in a separate pan and cook vermicelli until al dente. Drain and keep aside.

Add cooked vermicelli to the vegetable mixture and mix well. Cook for another 2-3 minutes.

Add lemon juice and salt. Mix well.

Remove from heat and let it rest for 5 minutes.
