Cinnamon and Maple-Flavored Okara Bars
Okara is a byproduct of soy milk production and is rich in fiber and protein.

Preheat the oven to 350°F (175°C). Grease a baking dish.

In a large bowl, combine the okara, almond flour, rolled oats, cinnamon, baking powder, and salt.

In a separate bowl, mix together the maple syrup, coconut oil, and vanilla extract.

Add the wet ingredients to the dry ingredients and mix well.

Fold in the chopped nuts and dried fruits.

Pour the mixture into the greased baking dish and spread it evenly.

Bake for 25 minutes or until the edges are golden brown.

Remove from the oven and let it cool in the dish for 30 minutes.
