Rinse the lentils under cold water.

In a large pot, heat some oil over medium heat.

Add the onion, garlic, and ginger. Sauté until fragrant.

Add the curry powder, thyme, allspice, salt, and black pepper. Stir well.

Add the lentils, coconut milk, vegetable stock, scotch bonnet pepper, carrot, and potato. Bring to a boil.

Reduce the heat and simmer for 25-30 minutes, or until the lentils and vegetables are tender.

Remove the scotch bonnet pepper and stir in the lime juice.

Serve hot, garnished with fresh cilantro.
