Peel and dice the sweet potatoes.

Heat olive oil in a large pot over medium heat.

Add onion and garlic cloves, sauté until translucent.

Add curry powder and stir for 1 minute.

Add sweet potatoes, vegetable broth, coconut milk, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 20-25 minutes, until sweet potatoes are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.
