Cut the bell peppers, zucchini, eggplant, and red onion into bite-sized pieces.

In a large bowl, combine the chopped vegetables, cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well to coat the vegetables evenly.
