Prepare the falafel mix according to the package instructions.

Preheat the oven to 400°F (200°C). Cut the onion into thin slices and spread them on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast in the oven for 20 minutes or until caramelized.

Cook the couscous according to the package instructions.

In a small bowl, mix together the lemon juice, cumin powder, coriander powder, minced garlic, salt, and black pepper.

In a large mixing bowl, combine the prepared falafel mix, chopped parsley, and the lemon juice mixture. Mix well.

Shape the falafel mixture into small patties and fry them in olive oil until golden brown.

Warm the pita bread in the oven or on a stovetop griddle.

Assemble the dish by placing a pita bread on a plate, spreading a layer of roasted garlic and caramelized onion couscous, and topping it with falafel patties.
