Barley and Herb-Stuffed Vegetables
Barley is one of the oldest cultivated grains and has been used as a staple food in many cultures for centuries.

Cook barley according to package instructions.

Preheat the oven to 375°F (190°C).

Cut the top off the vegetables and scoop out the seeds and flesh.

In a pan, heat olive oil and sauté onion and garlic until translucent.

Add cooked barley, fresh herbs, lemon juice, salt, and black pepper to the pan. Mix well.

Stuff the vegetables with the barley mixture.

Place the stuffed vegetables in a baking dish and cover with foil.

Bake for 40 minutes.

Remove the foil and bake for an additional 10-15 minutes until the vegetables are tender and lightly browned.

Let the stuffed vegetables rest for 10 minutes before serving.
