Rinse the lentils and set aside.

In a large pot, heat some oil over medium heat.

Add the onion, garlic, and ginger. Sauté until fragrant.

Add the carrots, curry powder, cumin, and coriander. Cook for 5 minutes.

Add the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender.

Stir in the coconut milk, lemon juice, salt, and black pepper. Cook for an additional 5 minutes.

Serve hot, garnished with fresh cilantro.
