Roasted Pears With Coconut Butterscotch Sauce
Pears are one of the few fruits that actually ripen better off the tree. They are usually harvested when they are still hard and then left to ripen at room temperature.

Preheat the oven to 375°F (190°C).

Cut the pears in half and remove the core.

Place the pears on a baking sheet, cut side up.

In a small saucepan, combine the coconut milk, brown sugar, butter, vanilla extract, and salt. Heat over medium heat until the sugar is dissolved and the mixture is smooth.

Pour the coconut butterscotch sauce over the pears.

Roast the pears in the preheated oven for 25 minutes, or until they are tender and slightly caramelized.

Remove the pears from the oven and let them rest for 5 minutes.

Serve the roasted pears with the coconut butterscotch sauce.
