Chili con carne, a traditional meat-based chili, originated in Texas, but vegan chili has gained popularity as a healthy and flavorful alternative.

Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Cook until softened.

Add grated carrots and cook for another 2 minutes.

Add canned tomatoes, drained kidney beans, drained black beans, corn kernels, chili powder, cumin powder, paprika, salt, and black pepper. Stir well.

Pour in water and bring to a boil. Reduce heat and simmer for 20 minutes.

Serve hot, garnished with fresh cilantro.
