Sweet potatoes are an excellent source of vitamin A, which is important for maintaining good vision and a healthy immune system.

Peel and chop the sweet potatoes into small cubes.

Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic cloves, and sauté until they become translucent.

Add the sweet potatoes to the pot and stir well.

Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes, or until the sweet potatoes are tender.

In the meantime, wash and chop the kale into small pieces.

Add the chopped kale to the pot and cook for an additional 5 minutes.

Remove the pot from heat and let it cool slightly.

Using an immersion blender or a regular blender, blend the soup until smooth.

Return the soup to the pot and stir in the coconut milk, salt, black pepper, cayenne pepper, and lemon juice.

Heat the soup over low heat for a few minutes, stirring occasionally.
