Miracle Soup
Soup has been considered a miracle food since ancient times, as it is nourishing, comforting, and can be made with a variety of ingredients.

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.

Add cumin, paprika, salt, and pepper, and stir for 1 minute.

Add diced carrots, potatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until vegetables are tender.

Add diced tomatoes and cook for an additional 5 minutes.

Remove from heat and let the soup rest for 5 minutes.

Blend the soup until smooth using an immersion blender or regular blender.

Stir in lime juice and fresh cilantro.
