Tofu is made from soy milk and is a great source of plant-based protein.

Drain and press the tofu to remove excess water. Crumble the tofu into a bowl.

Thinly slice the leek and add it to the bowl with tofu.

In a separate bowl, whisk together the whole wheat flour, baking powder, soy sauce, sesame oil, water, salt, and black pepper.

Pour the flour mixture into the bowl with tofu and leek. Stir until well combined.

Heat vegetable oil in a non-stick pan over medium heat.

Scoop the tofu and leek mixture onto the pan to form pancakes. Cook for about 4-5 minutes on each side, or until golden brown.

Serve the pancakes hot with your favorite dipping sauce or toppings.
