Peel and slice the carrots into sticks.

In a mixing bowl, toss the carrot sticks with olive oil, minced garlic, fresh herbs, lemon juice, salt, and black pepper.

Roast in the preheated oven for 20 minutes or until the carrots are tender and slightly caramelized.
