In a mixing bowl, combine the coconut milk, rice flour, pandan juice, sugar, and salt. Whisk until smooth.

Heat a non-stick pan over medium heat. Pour a ladleful of the batter onto the pan and swirl to form a thin crepe. Cook until the edges start to lift and the bottom is lightly browned. Flip and cook the other side briefly. Repeat with the remaining batter.

In a separate pan, melt the palm sugar with a little water to form a syrup. Add the grated coconut and cook until slightly caramelized.

Place a crepe on a plate and spoon some of the coconut filling onto one end. Roll tightly and repeat with the remaining crepes.

Serve the coconut crepe rolls warm or at room temperature.
