Preheat the oven to 400°F (200°C).

Pierce the sweet potatoes with a fork and place them on a baking sheet. Roast for 30-40 minutes or until tender.

Once the sweet potatoes are cool enough to handle, peel off the skin and cut into chunks.

In a food processor, combine the roasted sweet potatoes, chickpeas, tahini, olive oil, lemon juice, garlic cloves, cumin, smoked paprika, salt, and water.

Blend until smooth and creamy.

Transfer the hummus to a serving bowl and garnish with fresh parsley.

Serve with pita bread, crackers, or fresh vegetables.
