Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.

Add diced potato and spinach leaves to the pot, and cook for 2-3 minutes until spinach wilts.

Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes until potato is tender.

Use an immersion blender to puree the soup until smooth. Season with salt, black pepper, and lemon juice.

Allow the soup to rest for 5 minutes before serving.
