Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.

Add green beans, diced tomatoes, diced potatoes, vegetable stock, salt, pepper, paprika, and bay leaf.

Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
