Peel and chop the sweet potatoes, onion, and garlic cloves.

In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the sweet potatoes, vegetable broth, smoked paprika, cumin, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the coconut milk. Cook for an additional 5 minutes.

Serve the soup hot, garnished with fresh cilantro.
