  • 1.5 cup Zucchini
  • 2 teaspoon Orange zest
  • 0.5 cup Orange juice
  • 0.5 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, combine the grated zucchini, orange zest, orange juice, vegetable oil, eggs, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the zucchini mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the bread cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  8. Slice and serve.
