Ingredients
  • 2 medium-sized Zucchini
  • 1 ripe Avocado
  • juice of 1 Lime
  • To taste handful Fresh basil leaves
  • To taste halved Cherry tomatoes
  • 1 tablespoon Olive oil
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Using a spiralizer or a julienne peeler, cut the zucchini into noodles.
  2. In a blender, combine the avocado, lime juice, basil leaves, garlic, olive oil, salt, and black pepper. Blend until smooth.
  3. In a large bowl, toss the zucchini noodles with the avocado sauce until well coated.
  4. Serve the zucchini noodles topped with cherry tomatoes.
