Ingredients
  • 3 medium-sized Zucchini
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 handful Fresh basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Slice the zucchini into rounds.
  2. Cut the cherry tomatoes in half.
  3. Thinly slice the red onion.
  4. Mince the garlic cloves.
  5. Heat olive oil in a pan over medium heat.
  6. Add the sliced zucchini, cherry tomatoes, red onion, and minced garlic to the pan.
  7. Cook for 8-10 minutes until the zucchini is tender.
  8. Drizzle with balsamic vinegar and season with salt and black pepper.
  9. Stir in fresh basil leaves.
  10. Remove from heat and let it rest for 5 minutes.
  11. Serve hot as a side dish or over cooked pasta or rice.
