  • 300 gram Zucchini
  • 200 gram Carrot
  • 2 clove Garlic
  • 2 teaspoon White wine vinegar
  • 2 tablespoon Extra virgin olive oil
  • 10 gram Fresh mint leaves
  • 1 pinch Salt
  • 1 pinch Black pepper
Instructions
  1. Slice the zucchini and carrot into thin rounds.
  2. Heat olive oil in a pan and add minced garlic.
  3. Add zucchini and carrot slices and cook until they start to soften.
  4. Add white wine vinegar, salt, and black pepper. Cook for another 2 minutes.
  5. Remove from heat and let it cool.
  6. Garnish with fresh mint leaves.
  7. Serve as an appetizer or side dish.
