Ingredients
  • 500 gram Zucchini
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Basil leaves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.
  2. Add sliced zucchini to the pot and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Remove from heat and let the soup cool slightly. Use a blender to puree the soup until smooth.
  5. Return the soup to the pot and stir in chopped basil leaves. Season with salt and black pepper.
  6. Simmer for another 5 minutes.
  7. Serve hot and garnish with additional basil leaves if desired.
