Ingredients
  • 2 medium-sized Zucchini
  • 1 cup Breadcrumbs
  • 1 cup Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried basil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 large Egg
  • 2 tablespoon Olive oil
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the zucchini into bite-sized pieces.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, dried basil, salt, and black pepper.
  4. In a separate bowl, beat the egg.
  5. Dip each zucchini piece into the beaten egg, then coat with the breadcrumb mixture.
  6. Place the coated zucchini pieces on a baking sheet lined with parchment paper.
  7. Drizzle olive oil over the zucchini bites.
  8. Bake in the preheated oven for 15 minutes or until golden brown.
