Ingredients
  • 2 tablespoon Olive oil
  • 1 medium-sized Onion
  • 2 minced Garlic cloves
  • 2 sliced Carrots
  • 2 sliced Celery stalks
  • 1 diced Zucchini
  • 1 14 oz can Canned diced tomatoes
  • 4 cups Vegetable broth
  • 1 15 oz can Kidney beans
  • 1 cup trimmed and halved Green beans
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Pasta
  • for garnish chopped Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add carrots, celery, and zucchini. Cook for 5 minutes, stirring occasionally.
  3. Stir in diced tomatoes and vegetable broth. Bring to a boil.
  4. Reduce heat to low, add kidney beans, green beans, oregano, basil, salt, and black pepper. Simmer for 15 minutes.
  5. Meanwhile, cook pasta according to package instructions. Drain and set aside.
  6. Add cooked pasta to the pot and let it simmer for an additional 5 minutes.
  7. Remove from heat and let it rest for 5 minutes.
  8. Serve hot, garnished with fresh parsley.
