  • 2 cup Corn
  • 1 cup Red Bell Pepper
  • 1 cup Cherry Tomatoes
  • 1 small Red Onion
  • 0.25 cup Cilantro
  • 2 tablespoon Lime Juice
  • 1 tablespoon Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1 medium Avocado
Instructions
  1. In a large mixing bowl, combine the corn, red bell pepper, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  3. Pour the dressing over the vegetables and toss to coat evenly.
  4. Cover and refrigerate for at least 15 minutes.
  5. Just before serving, gently fold in the diced avocado.
  6. Serve chilled and enjoy!
