Ingredients
  • 2 cup Rolled oats
  • 1 cup Almond flour
  • 1/4 cup Coconut sugar
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1/4 cup Almond milk
  • 2 tablespoon Coconut oil
  • 1/2 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, almond flour, coconut sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the almond milk, coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Line a baking sheet with parchment paper.
  6. Scoop about 2 tablespoons of the oatcake mixture onto the baking sheet and flatten it slightly with the back of a spoon.
  7. Bake for 15 minutes or until the edges are golden brown.
  8. Remove from the oven and let cool on a wire rack.
