Ingredients
  • 1 cup Red lentils
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 inch Ginger
  • 2 medium Tomatoes
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Turmeric powder
  • 1/2 teaspoon Chili powder
  • 2 cup Vegetable stock
  • 1/2 cup Coconut milk
  • 2 tablespoon Fresh cilantro
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Rinse the lentils and set aside.
  2. Heat oil in a large pot and sauté the onions until golden brown.
  3. Add the garlic and ginger and cook for another minute.
  4. Add the tomatoes, cumin, coriander, turmeric, and chili powder. Cook for 5 minutes.
  5. Add the lentils, vegetable stock, and coconut milk. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the lentils are tender.
  6. Stir in the cilantro, lemon juice, salt, and black pepper.
  7. Let the dhal rest for 5 minutes before serving.
  8. Serve hot with rice or naan bread.
