Ingredients
  • 4 cup Yellow squash
  • 1 cup Quinoa
  • 1 cup Red bell pepper
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Shredded cheese
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut the yellow squash in half lengthwise and scoop out the seeds to create a hollow boat shape.
  3. In a saucepan, cook the quinoa according to package instructions.
  4. In a skillet, heat olive oil over medium heat and sauté the red bell pepper, red onion, and garlic cloves until softened.
  5. In a large bowl, combine the cooked quinoa, sautéed vegetables, fresh parsley, salt, and black pepper.
  6. Stuff the hollowed yellow squash with the quinoa mixture and place them on a baking sheet.
  7. Bake for 20-25 minutes, until the squash is tender and the filling is heated through.
  8. Sprinkle shredded cheese on top and bake for an additional 5 minutes, until the cheese is melted and bubbly.
  9. Remove from the oven and let rest for 5 minutes before serving.
