Ingredients
  • 1 cup Yellow split peas
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse the yellow split peas under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, carrot, celery, and garlic. Sauté until vegetables are tender.
  4. Add rinsed split peas, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot.
  5. Bring to a boil, then reduce heat and simmer for about 40 minutes or until the split peas are soft.
  6. Remove bay leaves and blend the soup until smooth using an immersion blender or regular blender.
  7. Stir in lemon juice and adjust seasoning if needed.
  8. Let the soup rest for 5 minutes before serving.
  9. Serve hot and enjoy!
