Ingredients
  • 500 gram Yellow bell peppers
  • 1 piece Onion
  • 2 piece Garlic cloves
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
  • 2 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.
  2. Add sliced yellow bell peppers and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Remove from heat and let it cool slightly. Blend the soup until smooth using an immersion blender or a regular blender.
  5. Return the soup to the pot and stir in coconut milk, lime juice, salt, and black pepper. Heat over low heat for 5 minutes.
  6. Serve hot, garnished with chopped cilantro.
