Ingredients
  • 2 cup Basmati Rice
  • 1 cup Coconut Milk
  • 1 cup Water
  • 1 teaspoon Turmeric
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Cilantro
  • 1 tablespoon Lime Juice
Instructions
  1. Rinse the basmati rice until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, turmeric, salt, and black pepper.
  3. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
  4. Let the rice simmer for about 15-20 minutes, or until all the liquid is absorbed and the rice is cooked.
  5. Remove the saucepan from the heat and let the rice rest for 5 minutes.
  6. Fluff the rice with a fork, then stir in the cilantro and lime juice.
  7. Serve the yellow coconut rice hot.
